If I were to buy one, I was curious, could I change out thay bulky stock?

Yes, you can swap out the stock and pistol grip with anything marketed for an AR. There are two main styles of buffer tube (aka receiver extension) Milspec and Commercial. Milspec is more common/preferred but Derya uses a Commerical tube. If you want to use a Milspec stock you'll need to replace the buffer tube first, which involves filing the end plate a little to accommodate it (or getting a 3D printed version). Alternatively, if you want to slim out the stock the entire cheek riser assembly can be removed which makes a big difference. Edit: I only have experience with the aluminum reciever model and that's the only one I'd recommend. So I'm not sure if my advice above refers to the polymer version.
