That’s right, that’s why you should mount then sequentially as depicted, not beside each other.

You aren’t supposed to close one eye using any sighting system, doesn’t stop most of us from doing it.

Honestly, when im shooting long range, ive found myself a few times with both eyes open without even realizing it and never noticed any issues with it. But ive always had the belief that you were supposed to have that eye closed

No. Both eyes should be open. Less eye strain and better situational awareness, though some will place a blank object in front of their eye to block it from seeing anything but letting you keep it open. Despite knowing this, I still close my left eye most of the time.
